Phat Fudge Frenzy!

Have you guys heard of this mysterious “Phat Fudge” stuff?  I know, weird name! It was developed a couple of years ago by Mary, the Paleo Chef and I have been hearing a lot about it lately in the Paleo/Primal blogger world.  Everyone seems to have their own modified version of Phat Fudge,  AKA “Unicorn Fuel”.  Well,  who am I to be left behind! I need to get on this  Phat Fudge frenzy ASAP!

The thing about Phat Fudge is that it tastes remarkably fudgy, and is sweetened with only a small amount of raw honey.  It is full of all sorts of good fats and things you need for energy, focus, memory, along with anti inflammatory properties. I mean it’s like…. perfect!

  • 1/2 cup coconut oil
  • 1/2 cup grass fed butter
  • 1 cup almond butter/tahini/or nut butter of your choice
  • 1 Tbsp raw honey
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1/2 tsp cayenne
  • 1 tsp vanilla
  • 2 1/2 Tbsp Cacao powder
  • 1 tsp fresh coffee grounds (optional) I didn’t use them. I don’t like coffee flavoured things but apparently it’s great, if you do.
  • 1 tsp Maca powder (I didn’t know what it was either)
There are a lot of interesting things in phat fudge, but every ingredient is deliberate and can be adjusted according to your liking.  I suppose that’s why there are so many variations out there. You can also use all coconut oil, but I am all about grass fed butter these days.  I added some raw cacao nibs to my last batch for a crunch.

Add everything to a pot and stir gently over low heat.  Watch it swirl and melt like magic.

We both know that at this point you are going to taste your magic sauce. It’s a fact, and It’s OK, so just go ahead.  The smell and look of this warm, buttery potion is quite overwhelming to say the least.  It’s also super delicious. Beware that one taste leads to many,  so save some for the fudge!

If you haven’t eaten it all, carefully pour the remaining sauce into something like an ice cube tray. Probably just half full if using an ice cube tray. Or not. Up to you! Just beware that Maca powder, among it’s many health benefits, is known to enhance libido 🙂 Sooooo,  as Mary would say, unless you want unicorn babies everywhere? …better fill them half full.

I happened to have this cool flexible silicone tray that worked perfectly. When you have it filled, move it to the freezer for a couple of hours. If you are like me, you will likely be checking every half hour to see how they are doing and if they are still there. 😉  IMG_6338

Once frozen they should pop out easily. You will notice they melt quickly in your hands.

Keep these little fudgy nuggets of goodness in the fridge or freezer. Eat them when you get a hankering for something sweet or you need an energy boost. Grab one for breakfast with your coffee, or heck….drop one IN your coffee. It melts almost instantly and I am telling you, pure bliss! Your coffee will taste like you have gone to unicorn heaven! It feels so wrong to be eating fudge for breakfast. #rebel.
