Since we are talking perfect, let’s talk about today. Today was the perfect day spent around my home doing what I love. Cooking!
I have been wanting to try this recipe for a while so I could get it out to you all in time for holiday dinners. I mean, I was worried! I already missed the Canadian Thank Giving. The American Thanks Giving, Christmas, New Years, are all around the corner and what in the world are you going to serve for desert?! :0
Well don’t ya worry peeps, I got ya covered….again, and this one is a complete jaw dropper. I mean WOW! It’s sooo good that it’s actually better than traditional pumpkin pie. Hands down!! I wouldn’t joke about that. It’s EASY! I would’t joke about that either. The ingredients are basic, the crust has no sugar and the whole filling has only 1/2 cup of honey. Now you know why I call it perfect!
Don’t get all stressed out thinking you have to make a whole pie, crust and all from scratch. UGH, I knowwwww, a whole pie can be a daunting task. I honestly don’t think I have ever made a WHOLE pie from scratch, until NOW! You can too!
Filling
- 1 3/4 cup canned pure pumpkin (unsweetened, not pie filling!)
- 3 large eggs
- 1/2 cup full fat coconut milk (I used canned full fat)
- 1/2 cup honey
- 1 Tbsp ground cinnamon
- 1Tbsp ground nutmeg
- 1/8 tsp salt
- 1 Paleo Pie Crust – click for recipe

Put everything into a bowl and mix well. Pour filling into your UNBAKED Paleo Pie Crust, and bake for 45 min at 350. Let cool, then refrigerate for 2 hours to set before serving.
There you have it! Your holiday meals will be complete and I can rest easy knowing it. 🙂
I got this recipe from my favourite Paleo Chef Elana Amsterdam. Sometimes I change recipes up a bit, and make them my own, but not this time. This was made exactly as the recipe was written and I am glad I didn’t change a thing. Mmmm!! A perfectly delicious Paleo pumpkin pie with nothing but natural, whole ingredients that you can feel good about. If you don’t get a comment saying how delicious this is, I will be surprised.
